Explanation of the ‘Veritas Gateway to Food and Wine’ Kitchen Concept:
Anyone who has experienced Veritas knows that physically the Veritas kitchen is open to the customers. A counter runs along two sides of the kitchen offering the guests, who are dining there, a chance to observe and interact with the kitchen while perched on barstools. Although our open format creates a special challenge for chefs, it also offers opportunities.
Veritas also strives to maintain an open structure inside the kitchen. The chefs work together on all aspects of creating the Veritas experience. Together they:
- create the weekly Café and Wine Bar menu which is served every Thursday, Friday and Saturday evening from the freshest, most sustainable ingredients available
- maintain creativity using traditional culinary practices and beautiful presentation
- take full advantage of high quality local produce and seasonally appropriate offerings
- share other duties including lunch, private parties, special events and maintaining the deli case
- assist in taking care of other kitchen duties including ordering and receiving and overseeing other kitchen staff members
In an effort to keep the staff fresh and constantly moving toward new ideas we encourage our chefs to schedule trips outside of the St. Louis area to reinvigorate their culinary imagination and keep their minds focused and engaged. The scope of the trips should be designed to broaden their perspective and knowledge base and to bring them new skills and understandings. Whether the chef works a stage or simply experiences new foods and culture, there are a myriad of options for these trips.
Veritas hopes to develop this concept into one that not only benefits the growth of the chef but also brings fresh and interesting attention to Veritas as a culinary destination. We hope to be able to enrich not only our menu and cooking class offerings but also to begin to expand our fancy food options by promoting and selling the cheeses, sausages, jams, pickles etc. that our chefs come back and create for sale at Veritas and beyond.
This open concept is intended to bolster the idea of Veritas as a “Gateway” to the culinary worlds and to reinforce the idea of Veritas being St. Louis’ premier ‘supplier of interesting culinary experiences.’ We believe that Veritas needs chefs who are interested, engaged and constantly learning in order to make this possible.

When can I eat a meal at Veritas?
You may eat at Veritas during all “Veritas Café Hours” and during our “Special ‘Reservation Only’ Events.”
Veritas Café Hours
- Breakfast Saturday from 9:00 am to 2:00 pm and Sunday from 10:00 am to 2:00 pm
- Lunch Tuesday thru Sunday from 11:30 to 2:00
- Wine Bar Every Thursday evening and the first Saturday or each month from 5:30 to 11:00 pm
Basic Veritas Café Information:
- Reservations are not required in the Veritas Café but they are suggested, especially for groups of 4 or more.
- You may sit at the bar, at one of the tables inside the shop or on the patio when weather permits.
- You may seat yourself or ask a Veritas staff member for assistance. If you choose to sit on the patio, please let someone inside know that you would like to be served.
- You will make your own food choices by ordering off our menu.
- Breakfast and lunch menus change seasonally, while the Wine Bar menu changes each time it is held.
Special ‘Reservation Only’ Events

In addition, dinner is often served at some of the following events:

Basic Special ‘Reservation Only’ Events Information:
- Reservations are required and are secured by a credit card. The credit card is not used unless the party does neither comes to the event nor cancels in accordance with Veritas policy.
- Payment is welcome by check, cash or credit card during the evening of the event.
- There is no charge for large parties wishing to pay with separate checks.
- The price per person does not include tax and gratuity.
- With the exception of ‘Wine Pairing’ dinners, price per person does not include the cost of wine and beer.
- Guests make their own wine and beer choices (with the exception of ‘Wine Pairing’ dinners).
- By the glass wine choices can be made from the bottles open for the evening.
- Any bottle from the Veritas Wine Rack can be opened during an evening for the price of the bottle plus a $10.00 corkage.
- Reservations are limited to specific numbers based on the event. Table of Eight for example usually seat 40 guests, while most cooking classes are limited to 12.
